Ramps + Pharmacy

 

Between my personal patch of ramps that I have been nurturing the last handful of years, as well as an abundance of wild patches, I've been able to sustainably forage enough leaves to have an offering for those of you in Toronto!

This dish is near and dear to my heart because it brings my family and Vietnamese heritage together with my life in Ontario.

Bò lá lôt is my dad's favourite dish. Traditionally, it's seasoned beef wrapped in betal leaves and cooked over a charcoal grill. Whenever my dad comes for a visit, I'll try to track down enough big betal leaves to make this for him but that task isn't easy.

One day this year, something clicked. I tried replacing the betal leaves with ramp leaves! The caramelization of the ramp leaves gives sweet garlic butteriness to it. Next level.

Join me on Tuesday, May 28th at Pharmacy  for some delicious beer and to have a taste of my wild Ontario Vietnamese food.

(Yes, I'll also have a very limited number of spring rolls so get there before I eat them all)
