As we enter the final stages of Spring, Nick and I headed out to gather some if its beautiful offerings.
We waded out into peat bogs, amongst the tall green cattail leaves. Shared laughs as we sunk into the muddy waters, pulling shoots.

Join me for some classic Vietnamese street food: banh mi, the Vietnamese sub. Banh mi highlights the hybrid of French-Vietnamese food, with pickled daikon and carrots, carrots, fresh herbs, and protein, on an airy baguette. My favourite protein option is called nem nuong, which is a sweet pork sausage, that tastes excellent cooked over fire.

PRESCRIPTION DINNERS Pt. 1: RAMPFEST
Springtime in Appalachia means it is ramp festival season! Ramps are so revered they have their own festival.
Come join me and celebrate with my take, as I share ramps from my personal stash, prepared with a Vietnamese twist. Perfectly paired with delicious beer on tap next door.
Bo La Lot is a vietnamese BBQ dish of beef wrapped in betal leaves. Near the end of ramp season when the leaves are nice and big and a little tough, they make the perfect wrap for meat to be cooked over the fire. Think of how roasted garlic brings out a sweetness and mellows out the sharp and pungent hits. Same happens with the ramps leaves. These little bundles will be served up on fresh greens andnoodles, and nuoc mam.
And of course, everyone’s favourite, cha gio.
