Morels
Tuesday morning forage was prosperous! First bounty of yellow morels (Morchella esculenta).
It is one of the most prized and morphologically recognized fungi in the world.
Morels are excellent sources of vitamin D, iron, and phosphorus. They are a great support to the immune system, and it's richness in antioxidants that are capable of protecting against cellular damage caused by reactive oxygen species that have been implicated in several diseases, making it great for liver and cardiovascular health, and are anti-cancer.
