Fiddleheads

 

Metteuccia struthiopteris (fiddleheads) are young, tightly furled growth shoots of ferns. They have a similar taste to asparagus and a unique crunch.


Fresh fronds are rich in antioxidants and vitamin A (100g hold 120% of the RDI!), vitamin C (45% RDI), omega-3, and omega-6 essential fatty acids. They're also a good source of potassium, iron, manganese, and copper.
