BUFFALO MEAT
After giving me the news that he was going to take one and process one of his buffalo with my help, Leo went off to separate the bulls, and I sat down to digest it all. I felt an intense mix of excitement and nervousness for the process... and what I was going to cook for dinner!
Buffalo meat is a great alternative to beef. It is an excellent source of lean protein, and has less calories and cholesterol than beef. Since buffalo are often sourced from ranches and are fed grass, they have far less, if any, antibiotics and hormones, and contain more omega 3.
