SEA URCHIN

When I was in Mexico City I had dinner at Contramar. Listed under the specials was "hedgehog" ceviche. I debated if I was going to eat hedgehog or not...

I ordered it. When it arrived I was admittedly relieved to see it was actually sea urchin.

Sea urchin (Strongylocentrotus droebachiensis) is a great source of protein and omega-3. Flavour and texture wise, I like to refer to it as the ocean's butter.

Hooked had some fresh sea urchin so I thought I would try my hand at my own uni dish, and had it raw on top of yaki onigiri stuffed with fried pork belly. So. Good.

What a wonderful food source of nutrition: vitamins, minerals, and omega-3. Pleasurable to eat, versus taking omega-3 supplements, right?
