In my excitement of cooking the tongue, as soon as it was harvested I rushed off to start prepping it. I totally forgot that I had dreams of how I would prepare heart tartare if I had the opportunity. Then there was a knock at the back door of the cabin, heart in hand...
Eating heart isn't as strange as it sounds. Like typical cuts of meat, it's just another muscle. It contains higher amounts of B vitamins, iron, selenium, phosphorus, zinc, and CoQ10. CoQ10 is a strong antioxidant that protects against free radical damage and prevents cardiovascular disease.
I made my heart tartare with capers, shallots, lemon juice, egg yolk, salt, and pepper. Simple and delicious!
